Meet Executive Chef, Andrew Hebson

Chef Hebson’s culinary journey is a testament to a passion that took root at the age of 15, blossoming into a remarkable career marked by dedication and innovation. Having spent six years in various kitchens, Chef Hebson recognized the need to channel his life’s direction, leading him to the Pennsylvania Culinary Institute in Pittsburg and eventually to becoming a corporate executive chef for the Big Y Restaurant Group. Along the way, he garnered awards and acclaim, mentored by the esteemed Yves Carreau, a French chef who left an indelible mark on both the culinary and business aspects of Chef Hebson’s craft.

Joining the Snowpine Lodge team in November of 2023, Chef Hebson was captivated not only by the breathtaking view but also by the enchanting ambiance of the dining room. Recognizing the incredible potential of Snowpine Lodge, Chef Hebson saw it as the perfect canvas to showcase his culinary artistry. Enthusiastically, he embarked on this new chapter, eager to develop both his team and culinary processes, with a vision of creating an exceptional dining experience that harmonizes with the natural beauty of the mountainous surroundings—a true celebration of food, nature, and the Snowpine Lodge experience.

Swen's Restaurant

Swen’s Restaurant is more than just a dining establishment; it carries with it a profound legacy that intertwines with the rich history of Snowpine Lodge. The revelation of this unique connection unfolded when our owner, Mr. Pratt, acquired Snowpine Lodge, subsequently discovering a letter that cemented the establishment’s deep-rooted history. The letter was authored by Mr. Pratt’s great-grandfather, Swen O. Neilson, in 1932. This captivating piece of history recounts Swen’s experiences in the mining camps of Alta during the 1870s, where he, as a young man, proudly sent his first earnings home to provide his family with a stove. It was this poignant story that inspired the name of Swen’s Restaurant, paying homage to a legacy of resilience, family, and the enduring spirit of Snowpine Lodge. The echoes of Swen’s narrative come to life in a captivating mural within the dining room, inviting guests to dine amidst the rich tapestry of history.

With modern American cuisine rooted in classic French techniques, Chef Hebson crafts an approachable yet diverse menu for Swen’s Restaurant. Influences from around the world, including Japanese, Pan-Asian, and Latin American flavors, ensure a culinary journey for every palate. Swen’s commitment to accommodating dietary restrictions and offering gluten-free options underscores its dedication to providing a delightful dining experience.
